- 1/2 cup Italian bread crumbs
- 2/3 cup milk
- 1 lb ground beef (alternative options: pork, sausage, veal)
- 1/4 medium onion, finely diced
- 2 cloves garlic, minced
- 1 large egg, beaten
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/4 cup Parmigiano-Reggiano cheese, grated
- 1 tbsp fresh parsley (or 1 tsp dried)
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine Italian bread crumbs and milk. Set aside for 5 minutes.
- Add ground beef, onion, garlic, egg, salt, black pepper, Parmigiano-Reggiano, and parsley to the breadcrumb mixture. Mix until just combined.
- Using a cookie scoop, form the mixture into 2″ diameter balls and place on the baking sheet.
- Bake for 18-20 minutes, or until internal temperature reaches 165˚F (74°C).

Notes
- For firmer meatballs, adjust the amount of breadcrumbs to 1/3 cup and milk to 1/2 cup.
- Can be made ahead and frozen for convenience.
