  • 2/3 cup milk
  • 1 lb ground beef (alternative options: pork, sausage, veal)
  • 1/4 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/4 cup Parmigiano-Reggiano cheese, grated
  • 1 tbsp fresh parsley (or 1 tsp dried)

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, combine Italian bread crumbs and milk. Set aside for 5 minutes.
  3. Add ground beef, onion, garlic, egg, salt, black pepper, Parmigiano-Reggiano, and parsley to the breadcrumb mixture. Mix until just combined.
  4. Using a cookie scoop, form the mixture into 2″ diameter balls and place on the baking sheet.
  5. Bake for 18-20 minutes, or until internal temperature reaches 165˚F (74°C).

Notes

  • For firmer meatballs, adjust the amount of breadcrumbs to 1/3 cup and milk to 1/2 cup.
  • Can be made ahead and frozen for convenience.
