Description
A creamy and indulgent lobster chowder packed with succulent lobster meat, hearty potatoes, sweet corn, and a hint of thyme. This easy-to-follow recipe is perfect for cozy nights or special occasions, offering a taste of the coast in every spoonful.
Ingredients
Scale
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 1 medium onion, finely chopped
- 2 medium potatoes, peeled and diced
- 2 cups corn kernels (fresh or frozen)
- 4 cups seafood or chicken broth (low sodium)
- 2 cups cooked lobster meat, chopped
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté Aromatics: In a large pot, melt butter over medium heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and cook for 1 minute.
- Cook Potatoes: Add diced potatoes and broth. Bring to a boil, reduce heat, and simmer for 10-12 minutes until tender.
- Add Corn and Thyme: Stir in corn kernels and thyme. Simmer for 5 minutes to blend flavors.
- Blend for Creaminess (Optional): Purée part of the soup with an immersion blender for a thicker texture, leaving chunks intact.
- Incorporate Lobster and Cream: Stir in lobster meat and heavy cream. Heat gently without boiling. Adjust with salt and pepper to taste.
- Serve: Ladle into bowls, garnish with parsley, and serve with bread or crackers.
Notes
- Use fresh lobster for the best flavor, but frozen or canned lobster can work as a substitute.
- Customize thickness by blending more or less of the soup base.
- For a lighter version, substitute half-and-half or low-fat milk for heavy cream.
