  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 medium potatoes, peeled and diced
  • 2 cups corn kernels (fresh or frozen)
  • 4 cups seafood or chicken broth (low sodium)
  • 2 cups cooked lobster meat, chopped
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Sauté Aromatics: In a large pot, melt butter over medium heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and cook for 1 minute.
  • Cook Potatoes: Add diced potatoes and broth. Bring to a boil, reduce heat, and simmer for 10-12 minutes until tender.
  • Add Corn and Thyme: Stir in corn kernels and thyme. Simmer for 5 minutes to blend flavors.
  • Blend for Creaminess (Optional): Purée part of the soup with an immersion blender for a thicker texture, leaving chunks intact.
  • Incorporate Lobster and Cream: Stir in lobster meat and heavy cream. Heat gently without boiling. Adjust with salt and pepper to taste.
  • Serve: Ladle into bowls, garnish with parsley, and serve with bread or crackers.

Notes

  • Use fresh lobster for the best flavor, but frozen or canned lobster can work as a substitute.
  • Customize thickness by blending more or less of the soup base.
  • For a lighter version, substitute half-and-half or low-fat milk for heavy cream.
