Instructions

 

  • Preheat and Prep:
    • Preheat the oven to 325°F (163°C).
    • Grease a 9-inch springform pan.
  • Make Crust:
    • Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a medium bowl.
    • Press mixture into the bottom of the pan.
    • Bake for 10 minutes, then cool.
  • Prepare Filling:
    • Beat cream cheese and 1 cup sugar until smooth.
    • Add vanilla extract, then eggs one at a time, mixing well after each addition.
    • Mix in lemon juice, lime juice, lemon zest, and lime zest until fully incorporated.
    • Fold in chopped pistachios and cherries.
  • Bake Cheesecake:
    • Pour the filling over the cooled crust.
    • Bake for 50-60 minutes, or until the center is almost set and the edges are slightly golden.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly open.
  • Chill and Serve:
    • Chill the cheesecake in the refrigerator for at least 4 hours, or until fully set.
  • Before serving, top with whipped cream, whole cherries, and chopped pistachios.
