- 1 lb kielbasa sausage, sliced into rounds
- 3 medium russet potatoes, peeled and diced
- 3 medium carrots, sliced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup whole milk or heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups fresh spinach or kale, roughly chopped (optional)

Instructions
- Brown the Kielbasa: In a large pot, heat olive oil over medium heat. Add sliced kielbasa, cook until browned (5 minutes). Remove and set aside.
- Sauté Vegetables: In the same pot, add diced onion, garlic, carrots, and celery. Sauté until onion is translucent and vegetables soften (5 minutes).
- Add Potatoes and Broth: Add diced potatoes and chicken broth. Bring to a boil, reduce heat, and simmer until potatoes are tender (15-20 minutes).
- Optional Blending: For a thicker soup, blend a portion of the soup using an immersion blender or by blending a cup of the soup and returning it to the pot.
- Add Milk and Seasonings: Stir in milk or heavy cream, thyme, salt, and pepper. Simmer for 5 more minutes.
- Add Kielbasa and Greens: Return kielbasa to the pot, add spinach or kale, and cook until greens wilt (2-3 minutes).
