Description

Indulge in the ultimate gourmet sandwich, the Kennebunkport Lobster Grilled Cheese. This sandwich blends the sweetness of Maine lobster with the creamy textures of mascarpone and provolone cheeses, sandwiched between golden-browned country-style bread.


Ingredients

  • Butter: 4-6 tablespoons (½ to ¾ stick), room temperature
  • Chili Paste: 1 teaspoon
  • Wisconsin Mascarpone Cheese: ½ cup (4 ounces), softened
  • Scallions: 2, thinly sliced (white and green parts)
  • Tomatoes: ¼ cup, small dice
  • Country-Style White Bread: 4 slices
  • Wisconsin Provolone Cheese: 4 thin slices
  • Arugula: ½ cup
  • Maine Lobster: 1 cup, cooked and coarsely chopped

Instructions

  1. Prepare Chili Butter: In a small bowl, stir together butter and chili paste. Set aside.
  2. Make Cheese Mixture: In a medium bowl, combine Wisconsin Mascarpone Cheese, scallions, and tomatoes. Spread this mixture evenly over each bread slice.
  3. Assemble Sandwiches: On two slices of bread with Mascarpone mixture, layer two slices of Provolone cheese, followed by arugula. Arrange the lobster evenly over the arugula, then top with the remaining Provolone slices. Cover with the remaining bread slices, Mascarpone-side-down.
  4. Cook the Sandwiches: In a large nonstick skillet, melt 2-3 tablespoons of the prepared chili butter over medium heat. Place the sandwiches in the skillet. Spread the remaining butter over the top of the sandwiches. Cook until the bottom of the bread is golden brown, about 3 minutes. Using a spatula, carefully flip the sandwiches, pressing down gently. Continue cooking for an additional 3 minutes, or until both sides are golden brown and the cheese is melted and warm.
