Description

A delicious and easy-to-make Instant Pot dish featuring tender chicken, creamy cheeses, and the bold flavors of buffalo sauce and ranch dressing. Perfect for a quick weeknight dinner or meal prep.


Ingredients

  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced celery
  • 1/2 cup diced green onions
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  • Add the chicken broth and rice to the Instant Pot, then stir to combine.
  • Place the chicken pieces on top of the rice, but do not stir.
  • Secure the lid on the Instant Pot and ensure the vent is set to sealing.
  • Select the manual or pressure cook button and set the timer for 10 minutes.
  • When the cooking time is done, allow the pressure to release naturally for 5 minutes, then do a quick release.
  • Carefully remove the lid and stir in the buffalo sauce, ranch dressing, shredded cheddar cheese, shredded mozzarella cheese, diced celery, diced green onions, butter, garlic powder, onion powder, salt, and pepper.
  • Stir until the cheese is melted and the ingredients are well combined.
  • Serve immediately, garnished with extra green onions if desired.

Notes

  • Do not stir the chicken pieces into the rice before cooking to prevent the rice from becoming too mushy.
  • For a spicier kick, add more buffalo sauce or a pinch of cayenne pepper.
  • Serve with a side of celery sticks and extra ranch dressing for dipping.
