Hearty Cabbage Soup with Ground Beef – A Nutritious and Flavorful Comfort Meal

  • 1 large cabbage, chopped – The star of the show, cabbage is packed with fiber and nutrients.
  • 2 small onions, diced – Adds a base of sweetness and enhances the overall flavor.
  • 2 cans of stewed tomatoes – These will provide a tangy richness and balance the sweetness of the vegetables.
  • 1 pouch of Lipton Onion Soup Mix (any flavor) – This pre-made mix adds a boost of savory flavor to the broth.
  • 1 large celery stalk, chopped finely – Celery adds a nice crunchy texture and subtle earthiness.
  • 12 pounds of ground beef – The ground beef gives the soup its hearty and protein-rich quality. Make sure to choose lean ground beef to keep the dish healthy.
  • Water – Used as the base liquid to cook the vegetables and create the soup’s broth.

Instructions

Step 1: Prepare the Vegetables

  • Start by chopping the cabbage, dicing the onions, and finely chopping the celery stalk. Set these aside.

Step 2: Boil the Water

  • In a large saucepan or stockpot, fill it halfway with water (about 6-8 cups depending on the size of your pot). Bring the water to a boil over high heat.

Step 3: Add the Vegetables to the Boiling Water

  • Once the water is boiling, add the chopped cabbage, diced onions, and chopped celery into the pot. Reduce the heat to medium-low, allowing the mixture to simmer. Cover the pot partially with a lid and let the vegetables cook for about 10-15 minutes or until they soften.

Step 4: Cook the Ground Beef

  • While the vegetables are simmering, take out a separate frying pan or skillet. Add the ground beef and cook it over medium heat. Stir the beef occasionally to ensure even browning. This should take about 8-10 minutes. Be sure to break up the beef with a spatula as it cooks.
  • Once fully browned, drain any excess fat from the beef to prevent the soup from becoming too greasy.

Step 5: Season the Beef

  • After draining the fat, return the pan to the heat and sprinkle in your favorite spices, such as black pepper, paprika, or garlic powder. Stir in the Lipton Onion Soup Mix until the beef is fully coated and seasoned.

Step 6: Combine the Beef with the Vegetables

  • Carefully transfer the seasoned ground beef into the simmering pot of vegetables. Stir in the two cans of stewed tomatoes, making sure to break up the tomatoes with a spoon for even distribution throughout the soup.

Step 7: Simmer and Taste

  • Continue to simmer the soup on low heat for another 10-15 minutes to allow the flavors to meld together. Stir occasionally and taste the soup to adjust seasoning if needed. Add salt and pepper to taste, if desired.

Step 8: Serve

  • Once the soup is fully cooked, ladle it into bowls and serve warm.
