- For the Garlic Butter Steak Bites:
- 1 pound sirloin steak, cut into bite-sized pieces
- Salt and pepper, to taste
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- For the Cheesy Smashed Potatoes:
- 1 pound baby potatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh chives, chopped
Instructions
- Preheat the oven to 200°C (400°F). Place the baby potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until tender.
- While the potatoes are roasting, season the steak bites with salt and pepper.
- Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the steak bites and cook for 2-3 minutes per side until browned and cooked to your desired doneness. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cook for 1-2 minutes until fragrant. Return the steak bites to the skillet and toss to coat in the garlic butter sauce. Sprinkle with chopped parsley.
- Once the potatoes are tender, remove them from the oven and gently smash each potato with a fork or potato masher. Sprinkle the shredded cheddar and grated Parmesan cheese over the top. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve the garlic butter steak bites alongside the cheesy smashed potatoes, garnished with fresh chives.
