Ingredients
Scale
- 1 tbsp olive oil
- 1 tsp sugar
- 1/4 tsp salt
- 2 cloves garlic, minced
- 4 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 8 cups beef broth
- 1/2 tsp dried thyme
- 1 bay leaf
- Salt and black pepper, to taste
- 1 baguette, sliced into 1-inch rounds
- 2 cups shredded Gruyère cheese
Instructions
- Heat butter and olive oil in a large pot. Add sliced onions, sugar, and salt. Cook for 30-40 minutes, stirring often, until caramelized.
- Stir in garlic and cook for 1 minute. Add beef broth, thyme, and bay leaf. Simmer for 20-25 minutes. Adjust seasoning.
- Toast baguette slices in the oven at 400°F (200°C) for 5-7 minutes until golden.
- Preheat broiler. Ladle soup into oven-safe bowls, top with baguette slices, and cover with Gruyère cheese.
- Broil for 2-3 minutes until the cheese is bubbly and golden. Serve hot.
Notes
- Use yellow onions for a naturally sweet flavor.
- Substitute beef broth with vegetable broth for a vegetarian option.
- Keep a close watch while broiling to prevent the cheese from burning.
