- 4 cups milk

- 1 cup crumbled blue cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground mustard
- 1/4 teaspoon paprika
- 1/2 cup panko breadcrumbs
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
- In a large saucepan, heat the milk over medium heat until warm but not boiling.
- In a separate large pot, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until the mixture turns golden brown.
- Slowly add the warm milk to the butter and flour mixture, whisking constantly until smooth and thickened, about 5 minutes.
- Reduce the heat to low and add the cheddar, mozzarella, Gruyere, Parmesan, and blue cheese, stirring until completely melted and smooth.
- Add the salt, black pepper, ground mustard, and paprika to the cheese sauce, stirring to combine.
- Add the cooked macaroni to the cheese sauce, stirring gently to coat the pasta evenly.
- Transfer the macaroni and cheese to a large baking dish.
- In a small bowl, combine the panko breadcrumbs with the olive oil and sprinkle evenly over the macaroni and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- Remove from the oven and let cool slightly before serving. Garnish with chopped fresh parsley.
