  • 4 cups milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyere cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup crumbled blue cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon paprika
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  • In a large saucepan, heat the milk over medium heat until warm but not boiling.
  • In a separate large pot, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until the mixture turns golden brown.
  • Slowly add the warm milk to the butter and flour mixture, whisking constantly until smooth and thickened, about 5 minutes.
  • Reduce the heat to low and add the cheddar, mozzarella, Gruyere, Parmesan, and blue cheese, stirring until completely melted and smooth.
  • Add the salt, black pepper, ground mustard, and paprika to the cheese sauce, stirring to combine.
  • Add the cooked macaroni to the cheese sauce, stirring gently to coat the pasta evenly.
  • Transfer the macaroni and cheese to a large baking dish.
  • In a small bowl, combine the panko breadcrumbs with the olive oil and sprinkle evenly over the macaroni and cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  • Remove from the oven and let cool slightly before serving. Garnish with chopped fresh parsley.

Notes

For best results, use freshly shredded cheese rather than pre-shredded cheese, as it melts more smoothly. You can also customize the cheese blend to suit your taste preferences.
