Filipino Pancit Recipe

  • 1 yellow onion, diced
  • 6 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 package (8.8 ounces) Thai Vermicelli rice noodles
  • 2 tablespoons canola oil
  • 1 pound beef (or beef steak), sliced into bite-sized pieces
  • 1 cup chicken stock
  • 2 cups shredded cabbage
  • 1/2 cup sliced carrots
  • 3 green onions, diced
  • Kosher salt and cracked pepper, to taste
  • Lemon or lime wedges for garnish (optional)

Instructions

1. Soak the Rice Noodles:

  • Follow the package instructions to soak the vermicelli rice noodles. Typically, this involves soaking the noodles in hot water for about 10-15 minutes or until they are soft and pliable.
  • Once the noodles are fully softened, drain them and set aside.

2. Prepare the Ingredients:

  • While the noodles are soaking, prepare the rest of the ingredients. Dice the onion, mince the garlic, and slice the beef into bite-sized strips.
  • Shred the cabbage, slice the carrots thinly, and chop the green onions. Keep these vegetables on standby for quick cooking.

3. Cook the Beef:

  • Heat 2 tablespoons of canola oil in a large wok or sauté pan over medium-high heat.
  • Once the oil is hot, add the sliced beef, diced onion, and minced garlic to the pan. Pour in 2 tablespoons of soy sauce, which will give the beef a savory flavor.
  • Stir-fry the beef mixture for 3-5 minutes until the meat is browned and cooked through. Be sure to keep stirring so the garlic doesn’t burn.
  • Season with salt and pepper to taste.

4. Add the Vegetables:

  • Pour in 1 cup of chicken stock, which will help soften the vegetables and add a depth of flavor to the dish.
  • Add the shredded cabbage, sliced carrots, and chopped green onions to the pan.
  • Stir-fry for another 3-5 minutes until the vegetables have softened but still retain a slight crunch for texture.

5. Mix in the Noodles:

  • Add the soaked and drained rice noodles to the pan with the beef and vegetable mixture.
  • Toss everything together gently to ensure the noodles are well coated with the sauce and flavors.
  • Cook for another 2-3 minutes until everything is heated through. Taste and adjust the seasoning with more salt or pepper if needed.

6. Serve:

  • Transfer the Pancit to a serving dish. Garnish with fresh lemon or lime wedges for a tangy, citrusy finish, if desired.
  • Serve hot and enjoy this delicious, hearty Filipino Pancit.
