Easy Taco Stuffed Peppers are a flavorful and satisfying dish perfect for a quick weeknight dinner. Bell peppers are stuffed with a delicious mixture of seasoned ground beef, rice, black beans, and corn, then topped with melted cheddar cheese and fresh cilantro.

- 4 large bell peppers, any color
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the taco seasoning and follow the package instructions to combine.
- Stir in the cooked rice, black beans, corn, and salsa. Cook for another 2-3 minutes until heated through. Season with salt and pepper to taste.
- Spoon the beef mixture into the bell peppers, packing it in tightly.
- Sprinkle the tops with shredded cheddar cheese.
- Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro before serving.
Notes
- For a vegetarian option, substitute ground beef with a plant-based meat alternative or extra beans.
- To add more spice, mix in some chopped jalapeños with the filling.
