  • 4 large potatoes, diced

Instructions

  • Prepare the Potatoes:
    • Start by dicing 4 large potatoes into small, bite-sized pieces. This helps them cook evenly and quickly. Place the diced potatoes in a large pot and cover them with enough water to fully submerge them.
  • Cook the Potatoes and Onions:
    • Add 1 cup of diced onions to the pot with the potatoes. Bring the pot to a boil over medium heat and let the potatoes cook until they are tender, which should take about 10-12 minutes. You’ll know the potatoes are ready when they can be easily pierced with a fork.
    • Once the potatoes are tender, carefully drain off about half of the water, leaving enough in the pot to maintain some liquid for texture.
  • Add the Milk and Bouillon:
    • Stir in 2 cups of milk, and add 3 chicken bouillon cubes to the pot. Allow the mixture to simmer over medium heat, stirring occasionally to ensure the bouillon cubes fully dissolve into the soup. The bouillon adds a rich, savory flavor to the soup, enhancing the overall taste.
  • Thicken the Soup:
    • In a small bowl, combine 2 tablespoons of flour with a small amount of water to create a smooth paste. This step is important to prevent lumps from forming in the soup. Slowly stir this paste into the pot, mixing well to thicken the soup. Let the soup simmer for an additional 5-7 minutes, stirring occasionally, until it reaches your desired consistency.
  • Season the Soup:
    • Finally, add 2 tablespoons of dried parsley and 1/2 teaspoon of garlic powder to the soup. Stir everything together to distribute the seasonings evenly. Taste the soup and adjust the seasoning as needed, adding more garlic powder or parsley to your preference.
  • Serve and Enjoy:
    • Ladle the soup into bowls and serve immediately. This creamy potato soup is best enjoyed hot, offering a comforting, hearty meal that will warm you up from the inside out.
