  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Red pepper flakes, to taste (optional)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté briefly.
  3. Place chicken in the crockpot. Add sautéed garlic, cream, chicken broth, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
  5. Serve over pasta, rice, or mashed potatoes, garnished with fresh herbs if desired.

Notes

  • For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce 30 minutes before the end of cooking.
  • Substitute heavy cream with light cream for a lower-calorie version.
