Ingredients

  • Olive oil – 1 tbsp
  • Heavy cream – 1 cup
  • Garlic – 3 cloves, minced
  • Onion – 1 small, finely chopped
  • Chicken or vegetable broth – 4 cups
  • Diced tomatoes – 1 (14.5 oz) can, undrained
  • Dried basil – 1/2 tsp
  • Dried oregano – 1/2 tsp
  • Salt and pepper – to taste
  • Fresh baby spinach – 4 cups
  • Cheese tortellini – 1 (9 oz) package, fresh or frozen
  • Grated Parmesan cheese – 1/2 cup
  • Fresh basil, chopped – for garnish (optional)

Instructions

  • Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and cook for 4-5 minutes until softened. Add minced garlic and cook for 1-2 minutes until fragrant.
  • Build the Base: Pour in broth, heavy cream, and diced tomatoes (with juice). Stir in dried basil, oregano, salt, and pepper. Bring the mixture to a gentle simmer.
  • Add Tortellini and Spinach: Add tortellini to the pot and cook according to package instructions, usually 5-7 minutes for fresh or 8-10 for frozen, until tender. In the last 2 minutes, add spinach, stirring until wilted.
  • Finish with Parmesan: Stir in Parmesan until melted and well incorporated, adjusting seasoning as needed.
  • Serve: Ladle into bowls, garnish with fresh basil if desired, and serve hot.

Notes

  • Variations: Add shredded chicken or turkey sausage for extra protein. Substitute fresh spinach with frozen spinach (thaw and drain before adding).
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop to avoid overcooking the tortellini.
  • Dairy-Free Option: Substitute heavy cream with a dairy-free alternative like coconut cream, though this may change the flavor slightly.
  • Spice Level: Add a pinch of red pepper flakes for a spicy kick.
