Ingredients
- Olive oil – 1 tbsp
- Heavy cream – 1 cup
- Garlic – 3 cloves, minced
- Onion – 1 small, finely chopped
- Chicken or vegetable broth – 4 cups
- Diced tomatoes – 1 (14.5 oz) can, undrained
- Dried basil – 1/2 tsp
- Dried oregano – 1/2 tsp
- Salt and pepper – to taste
- Fresh baby spinach – 4 cups
- Cheese tortellini – 1 (9 oz) package, fresh or frozen
- Grated Parmesan cheese – 1/2 cup
- Fresh basil, chopped – for garnish (optional)
Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and cook for 4-5 minutes until softened. Add minced garlic and cook for 1-2 minutes until fragrant.
- Build the Base: Pour in broth, heavy cream, and diced tomatoes (with juice). Stir in dried basil, oregano, salt, and pepper. Bring the mixture to a gentle simmer.
- Add Tortellini and Spinach: Add tortellini to the pot and cook according to package instructions, usually 5-7 minutes for fresh or 8-10 for frozen, until tender. In the last 2 minutes, add spinach, stirring until wilted.
- Finish with Parmesan: Stir in Parmesan until melted and well incorporated, adjusting seasoning as needed.
- Serve: Ladle into bowls, garnish with fresh basil if desired, and serve hot.
Notes
- Variations: Add shredded chicken or turkey sausage for extra protein. Substitute fresh spinach with frozen spinach (thaw and drain before adding).
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop to avoid overcooking the tortellini.
- Dairy-Free Option: Substitute heavy cream with a dairy-free alternative like coconut cream, though this may change the flavor slightly.
- Spice Level: Add a pinch of red pepper flakes for a spicy kick.
