  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large potatoes, peeled and cubed
  • 1 large carrot, grated
  • 1 cup dill pickles, grated
  • 1/2 cup pickle juice (adjust to taste)
  • 1 cup sour cream
  • 1/4 cup flour
  • 1 teaspoon dried dill or 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  • Sauté the Aromatics: In a large pot, melt butter over medium heat. Add chopped onion and cook until translucent, about 3-5 minutes. Stir in minced garlic and sauté for 1 more minute.
  • Add Broth and Vegetables: Pour in chicken broth, then add cubed potatoes and grated carrot. Bring to a boil, reduce heat, and simmer for 15-20 minutes or until potatoes are tender.
  • Incorporate Pickles and Juice: Stir in grated dill pickles and pickle juice, then simmer for another 5 minutes.
  • Thicken the Soup: In a small bowl, mix sour cream and flour until smooth. Temper by adding a ladle of hot soup into the sour cream mixture, then slowly whisk back into the pot. Cook for an additional 5 minutes, stirring frequently until thickened.
  • Season and Serve: Add dill and season with salt and pepper to taste. Serve hot, garnished with additional dill if desired.

  • For a vegetarian version, substitute vegetable broth for chicken broth.
  • Adjust pickle juice quantity for desired tanginess. Add more for a sharper taste.
