  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can creamed corn
  • 1 (8.5 oz) package corn muffin mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Beat softened cream cheese until smooth. Add melted butter, sugar, milk, and beaten eggs; mix well.
  • Stir in the whole kernel corn, creamed corn, and corn muffin mix. Combine gently.
  • Add salt, black pepper, and shredded cheddar cheese (if using).
  • Pour the mixture into the prepared dish and bake for 45-50 minutes, or until the top is golden and the center is set.
  • Cool for a few minutes before cutting into squares and serving.

Notes

  • Add jalapeños or cayenne pepper for a spicy twist.
  • You can make this dish gluten-free by using a gluten-free corn muffin mix.
