- 1 tbsp olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 lb boneless, skinless chicken breasts (or thighs)
- 3 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1 cup heavy cream or half-and-half
- 8 oz egg noodles (or pasta of choice)
- 1 cup shredded cheddar cheese
- 8 oz cream cheese, softened and cubed
- 1/2 cup cooked, crumbled turkey bacon
- 1 tsp dried dill
- 1/2 tsp dried parsley
- Salt and pepper, to taste
- Fresh chives or parsley, chopped (for garnish)
Instructions
- Heat olive oil in a pot and sear the chicken on both sides until golden. Remove and set aside.
- Sauté onion, carrots, and celery in the same pot for 5 minutes. Add garlic and cook for 1 minute.
- Add chicken broth, dill, parsley, salt, and pepper. Return chicken to the pot and simmer for 20 minutes.
- Shred chicken and return it to the pot. Stir in noodles and cook until tender.
- Add heavy cream, cheddar cheese, and cream cheese. Stir until melted.
- Mix in turkey bacon, garnish with chives, and serve hot.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Substitute noodles with gluten-free pasta or zucchini spirals for dietary needs.
- Add red pepper flakes for a spicy kick.
