Ingredients

  • 1 tbsp olive oil or butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 8 oz egg noodles (or pasta of choice)
  • 1 cup shredded cheddar cheese
  • 8 oz cream cheese, softened and cubed
  • 1/2 cup cooked, crumbled turkey bacon
  • 1 tsp dried dill
  • 1/2 tsp dried parsley
  • Salt and pepper, to taste
  • Fresh chives or parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a pot and sear the chicken on both sides until golden. Remove and set aside.
  • Sauté onion, carrots, and celery in the same pot for 5 minutes. Add garlic and cook for 1 minute.
  • Add chicken broth, dill, parsley, salt, and pepper. Return chicken to the pot and simmer for 20 minutes.
  • Shred chicken and return it to the pot. Stir in noodles and cook until tender.
  • Add heavy cream, cheddar cheese, and cream cheese. Stir until melted.
  • Mix in turkey bacon, garnish with chives, and serve hot.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Substitute noodles with gluten-free pasta or zucchini spirals for dietary needs.
