  • Parmesan cheese (optional)

Instructions

  • Sauté minced garlic and chopped onion in olive oil until softened and fragrant.
  • Add chicken broth, water, thyme, bay leaf, and pepper. Simmer for 20 minutes.
  • Whisk egg yolks and Parmesan cheese (optional) in a bowl.
  • Temper the eggs by gradually mixing in hot soup.
  • Incorporate the egg mixture back into the pot, stirring until slightly thickened.
  • Serve hot with toasted bread and garnish with thyme.
