  • 1 onion, quartered
  • 4 garlic cloves, whole
  • 1 whole turkey (neck and giblets removed)
  • 4 carrots, cut into chunks
  • 2 celery stalks, cut into chunks
  • 1 lemon, quartered
  • Fresh herbs (optional)
  • 1 stick unsalted butter, softened
  • Salt and pepper to taste

Instructions

  1. Remove the turkey from the refrigerator, pat it dry, and bring it to room temperature (1 hour).
  2. Preheat the oven to 450°F.
  3. Add chicken stock, onion, garlic, carrots, and celery to a roasting pan.
  4. Stuff the turkey cavity with lemon, onion, fresh herbs, salt, and pepper.
  5. Rub butter generously over the turkey and season with salt and pepper.
  6. Place the turkey breast-side up on a roasting rack inside the pan.
  7. Roast at 450°F for 30 minutes, then reduce the heat to 350°F. Cover the breast with foil.
  8. Roast until the internal temperature reaches 165°F in the thickest part of the thigh.
  9. Let the turkey rest for 30 minutes before carving.
