Ingredients

  • 1 cup chopped onions
  • 1 cup chopped garlic (about 10 cloves)
  • 4 cups chicken broth
  • 1 cup diced potatoes
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  • Sauté Onions and Garlic: Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until softened.
  • Add Broth and Potatoes: Pour in chicken broth and add diced potatoes. Bring to a boil.
  • Simmer: Lower the heat and simmer for 20 minutes, or until potatoes are tender.
  • Blend: Use an immersion blender to puree the soup until smooth.
  • Add Cream and Season: Stir in heavy cream, thyme, salt, and pepper. Let heat through.
  • Garnish (Optional): Sprinkle with fresh parsley before serving.

Notes

For added richness, top with grated cheese and serve with crusty French bread. This soup can be made vegetarian by using vegetable broth in place of chicken broth.
