Description

Chili Dilly Beans are a delicious and tangy snack made by pickling fresh green beans with vinegar, garlic, and a blend of spices. Perfect as a side dish or a flavorful addition to salads and sandwiches.


Ingredients

  • 1 pound green beans, trimmed
  • 2 cups white vinegar
  • 1 cup water
  • 2 cloves garlic, peeled and smashed
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon dill seeds
  • 2 bay leaves

Instructions

  • Combine vinegar, water, garlic, salt, sugar, crushed red pepper flakes, black peppercorns, mustard seeds, dill seeds, and bay leaves in a saucepan. Bring to a boil.
  • Add green beans to the boiling mixture and cook for 4-5 minutes, until tender-crisp.
  • Remove from heat and let cool to room temperature.
  • Transfer beans and pickling liquid to a sterilized jar, ensuring beans are fully submerged.
  • Seal tightly and refrigerate for at least 24 hours before serving.

  • Beans will continue to develop flavor over time.
