- 1 pound green beans, trimmed
- 2 cups white vinegar
- 1 cup water
- 2 cloves garlic, peeled and smashed
- 2 teaspoons salt
- 1 teaspoon sugar
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon whole black peppercorns
- 1 teaspoon mustard seeds
- 1 teaspoon dill seeds
- 2 bay leaves
Instructions
- Combine vinegar, water, garlic, salt, sugar, crushed red pepper flakes, black peppercorns, mustard seeds, dill seeds, and bay leaves in a saucepan. Bring to a boil.
- Add green beans to the boiling mixture and cook for 4-5 minutes, until tender-crisp.
- Remove from heat and let cool to room temperature.
- Transfer beans and pickling liquid to a sterilized jar, ensuring beans are fully submerged.
- Seal tightly and refrigerate for at least 24 hours before serving.
