Instructions

  • Prepare the Soup Base:
    • Heat olive oil in a large pot over medium heat.
    • Sauté onion, carrots, and celery for 5-7 minutes.
    • Add cubed chicken and cook until browned, about 5 minutes.
    • Pour in chicken broth, season with salt, pepper, thyme, and parsley. Simmer for 15 minutes.
  • Make the Dumplings:
    • Sift flour, salt, baking powder, and black pepper into a bowl.
    • In a separate bowl, whisk together beaten egg and melted butter.
    • Combine wet and dry ingredients, adding milk slowly to form a semi-stiff batter.
  • Cook the Dumplings:
    • Drop spoonfuls of batter into the simmering soup, spacing them apart.
    • Cover the pot and cook for 15-20 minutes without lifting the lid.
  • Serve:
    • Ladle soup and dumplings into bowls and serve warm.
