  • Yield: 6 servings 1x

Description

A hearty, flavorful cabbage soup made with ground beef, vegetables, and broth. Perfect for a cozy meal that’s simple, nutritious, and ideal for weeknight dinners.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 head of cabbage, chopped
  • 4 carrots, sliced
  • 4 cups beef broth
  • 2 cups water
  • Salt and pepper, to taste

Instructions

  • In a large pot over medium heat, brown the ground beef, breaking it up with a spoon. Drain excess fat if needed.
  • Add the diced onion and minced garlic to the beef. Sauté for about 3-4 minutes, until onions are translucent and garlic is fragrant.
  • Stir in the chopped cabbage and sliced carrots, cooking for another 5 minutes, stirring occasionally.
  • Pour in the beef broth and water. Season with salt and pepper to taste, and bring to a boil.
  • Reduce heat to low, cover, and simmer for 30-40 minutes until the cabbage and carrots are tender.
  • Serve hot and enjoy!

Notes

  • Add fresh herbs like parsley or thyme for a burst of flavor.
  • For extra spice, try red pepper flakes or a few drops of hot sauce.
  • Store leftovers in the fridge for up to 3 days or freeze for longer storage.
