- 2 pounds ground beef (lean)
- 1 pound bulk Italian sausage (casings removed)
- ½ pound bacon
- 2 cans kidney beans, drained
- 1 can pinto beans, drained
- 1 can black beans, drained
- 2 cans diced tomatoes with juice
- 1 can tomato paste
- 1 large yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 2 cups beef stock
- Spices: chili powder, Worcestershire sauce, minced garlic, dried oregano, ground cumin, dried basil, salt, ground black pepper, paprika
Instructions
- Brown ground beef and sausage in a large pot; drain excess grease.
- In a separate pan, cook bacon until crispy; add to pot.
- Sauté onion and bell pepper in bacon drippings; add to pot.
- Mix in beans, tomatoes, tomato paste, beef stock, and spices.
- Cover and simmer over low heat for at least 2 hours.
