- 1 lb 90% lean ground beef
- 1 tbsp olive oil
- 1 medium red onion, chopped
- 1 tbsp garlic powder
- 2 1/2 tbsp chili powder
- 2 tbsp ground cumin
- 1/4 tsp cayenne pepper (optional)
- 1 1/2 cups beef broth
- 1 (15 oz.) can petite diced tomatoes
- 1 (16 oz.) can red kidney beans, drained and rinsed
- 2 tbsp tomato paste
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef, breaking it apart with a spoon, until browned.
- Add chopped onion, cooking until soft. Stir in garlic powder, chili powder, cumin, and cayenne pepper, cooking for 1 minute.
- Mix in beef broth, tomatoes, and tomato paste. Bring to a simmer, then reduce heat to low, cover, and cook for 30 minutes.
- Stir in kidney beans and continue to simmer for an additional 10 minutes. Season with salt and pepper to taste.
- Serve hot with your choice of garnishes.
