- 4 boneless, skinless chicken breasts
- 1 bunch asparagus spears, trimmed
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Butterfly each chicken breast by cutting horizontally almost all the way through, then open like a book.
- Season the inside of each chicken breast with salt, pepper, and Italian seasoning.
- Lay a few asparagus spears on one side of each chicken breast.
- Sprinkle mozzarella cheese and minced garlic over the asparagus.
- Roll the chicken breasts tightly, tucking in the filling as you go, and secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken breasts until golden brown on all sides, about 3-4 minutes per side.
- Sprinkle grated Parmesan cheese over the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and no longer pink in the center.
- Remove from the oven, garnish with chopped parsley, and serve hot.
Notes
- Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- You can secure the rolled chicken with toothpicks to prevent the filling from spilling out.
