Description

A delicious and healthy meal featuring tender chicken breasts stuffed with fresh asparagus and a blend of mozzarella and Parmesan cheese. Perfect for any occasion, this dish is both nutritious and satisfying.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bunch asparagus spears, trimmed
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • Butterfly each chicken breast by cutting horizontally almost all the way through, then open like a book.
  • Season the inside of each chicken breast with salt, pepper, and Italian seasoning.
  • Lay a few asparagus spears on one side of each chicken breast.
  • Sprinkle mozzarella cheese and minced garlic over the asparagus.
  • Roll the chicken breasts tightly, tucking in the filling as you go, and secure with toothpicks if needed.
  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear the chicken breasts until golden brown on all sides, about 3-4 minutes per side.
  • Sprinkle grated Parmesan cheese over the chicken breasts.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and no longer pink in the center.
  • Remove from the oven, garnish with chopped parsley, and serve hot.

Notes

  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
  • You can secure the rolled chicken with toothpicks to prevent the filling from spilling out.
